Probiotic is a substance that contains microorganism (specially bacteria) that are beneficial to the host organism. The term “Probiotic” comes from the Latin word where “pro” means “for” and greek word “biotic” meaning “bios” or “life.” Probiotic able to survive the passage through the digestive system, It also able to utilize the nutrients and substrates in a normal diet. They are non-pathogenic and non-toxic. The aim of this study is to present the results of a correctly conducted new food product development process.
Basically it is an attempt to make RTS milk- probiotic powder using Indian blackberry (Sygygium cumini), that will be helpful for digestive system and controlling others digestive related diseases likes Irritable bowel syndrome (IBS), Inflammatory bowel disease (IBD), Infectious diarrhea (caused by viruses, bacteria, or parasites) and Diarrhea caused by antibiotics.
At first make milk mix is made by using buffalo milk using different concentration of sugar, probiotic organism and Indian blackberry juice. After making milk mix, spray dryer will be used to convert it powder form. As a probiotic organism Lactobacillus acidophilus and Bifido bifidus are used.Now it is not available in Indian food & medicine market. The idea is totally new, actually we are going to make it through research work.
